Grapes: Predominantly organic Chardonnay – organic Pinot Noir
Vinification: Soft pressing, fermentation in temperature-controlled stainless steel tanks and wood.

Maturation: 8 months in stainless steel tanks
Aging: From 50 months on the lees
Alcohol: 12% / 12.5%
Residual sugar: 4g/l sugar
Color: Straw yellow tending towards golden yellow with age
Perlage: Fine and persistent
Aroma: Complex, floral and citrusy
Taste: Full-bodied, mineral, fresh and persistent
Pairings: Preferably paired with first and second courses based on fish and fatty meats, raw and smoked fish.

Serving temperature: Serve at around 5-8°C
Soil type: Calcareous with a quartz-calcarenite matrix, partly clayey.

Product characteristics: Improved and evolving over time; if properly stored, it can last over ten years after disgorgement. Always fresh and long-lived, with a pronounced minerality and a delicate creaminess acquired from long aging on the lees, certified on each bottle collar. This product is never standardized, but is recognizable for its citrus and fruity aromas, scents, and flavors, depending on the vintage.
